Hello, Hello! If you haven’t heard me say this before, here’s a secret confession: I don’t LOVE to cook. No, seriously. It’s not so much that i don’t like hanging out and experimenting in my kitchen, and more that I simply don’t have time. That’s why my goal is create the easiest recipes, like this one–5 minute paleo creamy cashew cheese sauce! Tastes JUST like queso! It’s so good I literally can’t stop pouring it on anything and everything.
Confession #2, I am now a paleo creamy cashew cheese sauce addict.
Regular ol’ cheese is not part of the framework of the Paleo diet. This is mostly because lactose tends to cause gut distress and lead to increased inflammation. The Keto diet approach does include cheese, although given that lactose is essentially a sugar, you may feel better limiting this dairy product. I, personally, do consume cheese, although in very moderate amounts and typically stick to grass fed or goat’s milk derived. Regardless, this “cheese” sauce is made of cashews! Both Paleo and Keto folks, this is FOR you!
I have seen a number of recipes for creamy cashew cheese sauce, but I have a secret ingredient that totally changes the game. Fire Cider, ya’ll. It might be a tad pricey for an apple cider vinegar blend, but I use this stuff almost every day, even if it’s just to take a shot of it! Great for your gut!
And this creamy cashew cheese sauce? As I mentioned above, goes fabulously with just about anything. My fav pairings thus far would be on top of zoodles (i.e. zucchini noodles)… as a dip for cucumber, celery, or carrots…mixed with cauliflower as a mac’n’cheese alternative…and yes, on top of steak. So, so delish.
Here’s the recipe deets.
– 1 cup of unsalted cashews (sometimes cheaper in bulk on Amazon!)
– 1 cup of water
– 2 garlic cloves
– 1/2 teaspoon Pink Himalayan salt (full of over 80 minerals!)
– 1/2 teaspoon pepper
– 1 teaspoon mustard powder
– 1 teaspoon of Fire Cider
If you don’t have a high powered blender, soak your nuts in water overnight. I have a the Ninja, and even blending in the smaller “Ninja Nutri Cups” was enough to produce a smooth, creamy sauce. Otherwise, just blend all your ingredients together and enjoy!
