Everyone ready for the freakin’ weekend? I’m headed to the beach tomorrow for another girls’ weekend and can not wait for a lil’ sun, salt, and sand. Before I head out though, I wanted to share with y’all an easy, breezy summertime treat recipe. Remember as kids we used to eat those creamy yogurt pops, laden with sugar and probably zero ‘yogurt’? Those were my inspiration this week, except mine are packed with protein, antioxidants, AND are super low glycemic! WIN, right? I swear these are so good you’ll wanna slap yo’ mama (don’t slap your mom).
As with most things I eat, I like to keep the ingredient list 1, real and 2, simple. This recipe is both, and actually only requires two or three ingredients. I used full fat, plain Fage Greek yogurt and a mix of blueberries and blackberries… and that’s it! You can also add a bit of raw stevia if you prefer to sweeten.
One thing to note – I often get asked about which yogurt people should choose. Please, please, please avoid any yogurt that is labeled “Low Fat”, “No-Fat”, “0% Fat”. Why? The fat that exists in real, plain yogurt will keep you satiated, has a great natural flavor, and is packed with protein. Generally, when you purchase a “Low Fat” version, the flavor of the fat is replaced with some sort of artificial flavoring or chemical substitute. The words “All Natural!” essentially means nothing these days, so don’t be a victim to marketing! And for everyone out there scared to eat fat… fat does NOT make ya fat. Sugar does. Low Fat is so 80’s!
So back to these ridiculously awesome pops…
Ingredients. The amounts posted are just a rough estimate, as you can play around with it until you get the consistency you prefer. I made 3 pops with these amounts.
6 extra large table spoons of Plain Full Fat (or if you can’t find, 2% is okayyyy…. but don’t go ANY lower!!) Fage Greek Yogurt.
1 cup of blueberries and blackberries.
Packet of raw stevia.
Puree in a blender your blueberries and blackberries, until liquefied. Add in your yogurt (and stevia). Blend together. Fyi- because the yogurt is so thick, I needed to put in half the yogurt, blend a bit, and then add in the rest. Mix well until you have a creamy, and consistent texture.
Pour, or scoop if it’s too thick, into your pop molds. Freeze away, and then enjoy!
