Happy August!

Here in Baltimore, it’s been hotter than a jalapeno’s armpit, which actually might be a good thing since it’s inspired me to get all Pinterest-y creative with any type of food that doesn’t induce more sweating. Basically, I’m just going to be over here eating a lot of popsicles and trying to tame the chia pet on top of my head for the next few weeks. I’ll spare you the photos. In the meantime, here’s one of my new fav popsicle (Keto!) recipes. It’s essentially matcha, avocado, and collagen, but I also took the liberty to coat the tops of each with a coconut cacao amalgam, and then dust it with crushed pistachios. I swear making these pops were a lot less involved than the above sentence sounds ; )

If you’re scratching your head why I’ve picked this combo of matcha, avocado, and yes– you read correctly–collagen, here’s the 411:

Avocados are full of Omega 3 fatty acids, and as someone that adheres to a Ketogenic approach to eating, I try to fill my diet with a lot of these. Gimme all the good fats! Matcha, if you’re not familiar, is a potent powdered green tea, abundant in polyphenols, a type of antioxidant. And lastly, collagen protein is rich in amino acids, particularly the anti-inflammatory glycine. Collagen is something I am really trying to consume more of given my very active lifestyle as a fitness instructor… oh, and my maturing age ; ) Sigh. Good news, there’s a zillion ways to incorporate this muscle building block into recipes!

So, here’s the skinny on how to make these things. If you’ve followed this blog for any given amount of time, you know I love (and trust!) Bulletproof’s products so no surprise that’s the brand of collagen I choose. You can use whichever brand you like best or I’ve included a link to their’s!

Popsicle base

1/2 an avocado

1 tbs of Matcha

1 scoop of collagen powder

1/4 cup of full fat coconut milk

1/2 a lime, juice squeezed

Organic Stevia or Monkfruit sugar to your preferred taste

3 crushed mint leaves


3 tbs of coconut oil

1 tsp of cacao powder

Organic Stevia or Monkfruit sugar to taste

crushed pistashios



Blend base ingredients together. Feel free to add more or subtract ingredients to your desired sweetness preferences and tastebuds!

Freeze overnight in silicone molds.

Melt coconut oil and cacao powder, and add sweetener. Drizzle on top of frozen pops. Sprinkle crushed nuts on top.
